Pork stew with white cabbage - Gjergj Nuku
PREPARATION TIME
25 minutes + 1.5 hours simmering
INGREDIENTS: for 4 people
- 1 kg pork (e.g. pork fillet)
- 1 whole white cabbage
- 1 onion
- 1 carrot
- 1 celery stalk
- 3 tbsp tomato paste
- pinch of salt and pepper
- 1 tbsp olive oil
- 2 bay leaves
- ½ glass white wine
PREPARATION
Chop the onion, carrot and celery. Heat a large stew pot with the olive oil and add the chopped vegetables. Stir-fry for 3 min. Add the pork and season with salt and pepper. Fry the meat for 6 min on medium heat, then pour in the white wine. After 1 min, add the tomato paste and the bay leaves. Fry for another 3 min, then put the lid on the pan, turn down the heat and simmer. Next, slice the white cabbage into fine strips and add to the pork, stirring well. Add 2 glasses of water. Put the lid back on the pan and let the stew simmer for 1½ hours on medium-low heat. Season to taste with salt and pepper. Serve the stew with white rice, mashed potatoes or freshly baked bread.
