Pork cheecks with vegetables -Vicky & Marcel
PREPARATION TIME

IGREDIENTS : for 4 people
- 1.2 kg pork cheeks
- 1 red and 1 green sweet pepper
- 5 large tomatoes, diced
- 2 to 3 large onions
- 2 to 3 large carrots
- 150 g mushrooms, sliced
- 200 g fine green beans
- 3 tbsp tomato paste
- salt and pepper
- 1 tsp paprika
- butter, for frying
- 1 tbsp sauce thickener (e.g. cornstarch)
PREPARATION
Dice the onions and sweat them until translucent in a big stew pot in a knob of butter. Add the pork cheeks and fry all around until golden brown. Stir in the diced tomatoes. Finely chop the sweet pepper and carrot and add to the meat. Stir well and season with paprika, salt and pepper. Add water until barely submerged, and bring to the boil. Turn down the heat and simmer, covered, for 55 minutes. stirring frequently. Add the tomato paste, mushrooms and beans and allow to simmer for another 15 minutes. Season the stew to taste with salt and pepper, and thicken the sauce if necessary with sauce thickener or cornstarch mixed with a splash of water. Delicious with boiled potatoes!
VICKY AND MAREL
Vicky and Marcel, who comes from Germany, fell in love at Comeco. Marcel drives the pigs to their stalls right after delivery in an animal-friendly manner, while Vicky works as a responsable at the packaging department. They now have two beautiful daughters. Marcel strives to share a piece of German culture with his children through this dish. At their age, their tasks in the kitchen are still restricted to stirring, but there is no doubt that they will, at a given time, put their own spin on this dish, which is traditionally cooked outdoors over an open flame. The kids like to eat pasta with this dish, but Vicky and Marcel emphatically recommend real Belgian fries as a side dish.
