Asian curry with pork - Gener Valenton
Preparation time:
35 minutes
Ingredients (for 4 people):
- 500 g pork fillet
- 200 g basmati rice
- 250 g chestnut mushrooms
- 3 spring onions
- 2 leeks
- 250 g shitake mushrooms
- 1 red onion, in rings
- 2 tbsp yellow curry paste
- 200 ml vegetable stock
- 250 ml coconut milk
- 1 tbsp sesame oil
- 2 tbsp peanut oil
- 2 tbsp soy sauce
- 2 tbsp sesame seeds
- Handful of coriander
- Salt and pepper
Preparation:
1. Cook the rice in salted water until tender, according to the instructions on the packet. Chop the leeks, slice the chestnut and shitake mushrooms, slice the spring onion into rings.
2. Heat both types of oil in a wok. Stir-fry all the sliced vegetables in the wok. Add the curry paste and soy sauce, along with the coconut milk and stock. Simmer for a while.
3. Briefly fry the pork tenderloin in another pan, in a little oil over a high heat. Season with salt and pepper. Remove from the pan and Slice into thin slices.
4. Put a serving of rice into a bowl for each person, add some the vegetable curry and top with the pork. Sprinkle with sesame seeds, the red onion and the coriander.

Even as a child, Gener dreamed of working abroad. Europe, however, was not at the top of his list, as he believed it would be difficult for someone from the Philippines to find work there. Nevertheless, a few years later you can find Gener and three of his countrymen among the twenty-five members of technical team of Westvlees. Gener retrained as an electrician in the meantime. He recently became father to a strapping son for the first time, about whom he speaks often with the greatest pride.
